Apple pie recipe by Ellen: I just made a delicious apple pie. My mother’s crust – 1/2 cup oil, put 1/4c plus 3 TB cold water into freezer while you assemble ingredients, 2 C flour, pinch salt. When water is icy beat with oil and combine with flour. Work with hands until moistened and forms a ball. Divide into 2 and roll out between 2 pieces of wax paper until rounds for pie pan.
Fill with 3 1/2 lbs of apples – cortland, a mixture – ginger golds and macs. I like tart pies, so I use only 1/4 c sugar, drop of lemon, sometimes I add cinnamon and raisins, but this one was plain and delicious! Bake 40 minutes or until lightly browned. Start at 425 and reduce to 375 after 20 minutes
Applesauce – wash apples and cook over low heat until they collapse. Put through food mill and add nothing. DELICIOUS!!! Must use fresh apples
